Vegan Mocha Cookies

These cookies are the perfect gluten-free vegan sweet treat, with no sacrifices made in taste or flavor.The classic combination of coffee and chocolate makes a soft in the center, slightly crisp at the edges, and chewy cookies flavored with coffee concentrate and filled with chocolate chips. This original recipe calls for espresso powder or instant espresso. However, this ingredient was replaced by using Javy Coffee Concentrate. By switching to concentrate coffee in your recipes or daily coffee drinks, you get the convenience of not brewing coffee and fresh, 100% Arabica beans with pure water coffee in return. Feel free to adjust the coffee amounts to fit your personal preference. If you prefer a subtle taste we recommend using teaspoon instead of a tablespoon.

Ingredients

  • 1/4 cup brown sugar
  • 2 tbsp white sugar
  • 4 tbsp softened vegan butter
  • 1/2 tbsp Javy Coffee Concentrate
  • Dash vanilla extract
  • 1/2 cup + 2 tbsp gluten free flour
  • pinch salt
  • 1/4 tsp baking soda
  • 1/2 cup chocolate chips
  • 2 tbsp of plant based milk

Directions

  1. Preheat the oven to 350 F. Place the oven rack in the upper-center position, avoiding the lower rack and line two pans or baking sheet with parchment paper.
  2. Heat the plant milk to hot (not boiling), place into a small bowl and add the coffee, stir until dissolved, set aside
  3. Beat the butter, sugars, Javy Coffee Concentrate, and vanilla in a bowl. Add the flax egg, salt, and whisk well to combine. Next, add the gluten free flour and baking soda to the bowl and mix until fully incorporated.
  4. The dough should come together and look somewhat “glossy”. Then stir in the mini chocolate chips.
  5. Take 2 tablespoons of cookie dough and roll it in your dampened hands to form a ball, then while the cookie is in your hands, slightly flatten into a disk and place on the baking sheet. Try to keep the cookie size uniform. Space them apart as they do spread slightly. Continue until you have rolled all the dough into balls, flattened them, and placed on the baking sheet.
  6. Place the baking sheet into a preheated 350 F oven and bake for 12-14 minutes.
  7. After 12-ish minutes, remove from the oven, allow the cookies to sit on the baking sheet(s) undisturbed for 2 minutes to firm up, then transfer to a wire cooling rack.Enjoy!
