Homemade Healthy Coffee Ice Cream
Although, ice cream has summer written all over it… we have to admit it is perfect for all year long. No refined sugar? Check! Vegan? Check! Made with full fat coconut milk, this cold and creamy treat is going to be your favorite ice cream.
1-2 tbsp Javy Coffee Concentrate
- 1 pack coconut cream (33.8 fl oz)
- 4 tbsp honey
- 1/2 vanilla extract
Add the coconut cream to a bowl and beat it with a mixer for around 15 minutes.
Add 4 tablespoons of honey, 1 tablespoon of Javy Coffee and 1/2 teaspoon of vanilla extract. Mix it again for a few minutes with the stand mixer.
Transfer the batter to a plastic bowl with lid and let it freeze for about 2 hours and half.
While homemade ice cream is best the day it is made, you can technically keep it frozen for up to a few weeks and thaw before eating.
