Protein Coffee Pancake
The ultimate energy bomb pancake recipe! This recipe will definitely hump your breakfast or brunch, and guess what? It has fewer carbs!Pancakes always feel like a treat, but making this simple swap with protein mix adds more nutritional value to the breakfast. We like topping it with bananas and chocolate chips, but you can also go classic with butter and maple syrup and any fruit you’d like.
1 tbsp of Javy Coffee Concentrate
- 1 banana
- 75g oats
- 3 large eggs
- 1 tbsp baking powder
- pinch of cinnamon
- 2 tbsp protein powder (whey, pea or whatever your preference)
- 1 tsp cacao powder
- 2 tbsp plant based milk
- a handful of dark vegan choc chips
- Coconut oil or cooking spray for frying
- 1/2 cup Greek or plain yogurt mixed with 1/2 tsp Javy coffee concentrate
- Caramelized banana, cacao nibs, and a dusting of cacao powder
For the toppings
Whizz the banana, oats, eggs, milk, baking powder, cinnamon, cocoa powder, Javy coffee concentrate, and protein powder in a blender for 1-2 mins until smooth. Check if the oats have broken down, if not, blend for another minute. Transfer batter to a bowl and fold in chocolate chips.
Scoop about ⅓ cup batter onto a hot pan prepared with coconut oil and cook on medium heat for 2-3 minutes per side.
Repeat for the remaining pancake batter.
Create the pancake stack by adding a bit of the coffee yogurt until you have a small tower of pancakes. Top with bananas and cacao nibs, and cacao powder if desired and enjoy warm.
