Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup peanut butter (You can also use almond butter)
  • 2 eggs
  • 2 tbsp honey
  • 2 eggs
  • 1 tsp Javy Coffee Concentrate  
  • 1/2 cup almond flour
  • 2 tbsp dark cacao powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp sea salt
  • 1/2 cup almond dark chocolate bar, chopped

Directions

  1. Preheat oven to 350 degrees F and place liners in the muffin tins
  2. Whisk together the bananas, peanut butter, eggs, honey, vanilla, and coffee concentrate until smooth
  3. Add in the almond flour, cacao powder, baking soda, cinnamon, and salt. stir until combined
  4. Fold in the chocolate chunks
  5. Scoop the batter into the muffin tins. top with more chocolate chunks and sprinkle of sea salt (optional)
  6. Bake for 18-20 minutes until a knife comes out clean when inserted in the middle. Let cool before enjoying!
