Healthy Mocha Pancake
These fluffy, healthy, and tasty mocha pancakes are sure to perk up your weekend mornings and help you start the day with the right energy!
Ingredients
- 1 cup whole wheat flour
- 1 egg
- 1 tablespoon cocoa powder
- 1/4 teaspoon salt
- 1 scoop Instant Protein Coffee
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 8 oz (1 cup) unsweetened almond milk (or any milk of choice)
- 2 tablespoons Javy Mocha Syrup
- 1 teaspoon vanilla extract
- Toppings of choice (maple, honey, fresh fruits, etc)
Directions
- In a large bowl, whisk together whole wheat flour, Instant protein powder, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together almond milk, egg, Javy Mocha syrup, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; a few lumps are okay.
- Heat a griddle or non-stick skillet over medium heat. Scoop 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.
- Stack the pancakes on a plate and drizzle with maple, honey or any topping of choice.
