Healthy Mocha Pancake

Ingredients

  • 1 cup whole wheat flour
  • 1 egg
  • 1 tablespoon cocoa powder
  • 1/4 teaspoon salt
  • 1 scoop Instant Protein Coffee
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 8 oz (1 cup) unsweetened almond milk (or any milk of choice)
  • 2 tablespoons Javy Mocha Syrup
  • 1 teaspoon vanilla extract
  • Toppings of choice (maple, honey, fresh fruits, etc)

Directions

  1. In a large bowl, whisk together whole wheat flour, Instant protein powder, cocoa powder, baking powder, baking soda, and salt.
  2. In another bowl, whisk together almond milk, egg, Javy Mocha syrup, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; a few lumps are okay.
  4. Heat a griddle or non-stick skillet over medium heat. Scoop 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until the other side is golden brown.
  5. Stack the pancakes on a plate and drizzle with maple, honey or any topping of choice.
