French Toast

  • 8 oz (1 cup) milk of choice
  • 4 tablespoons cornstarch
  • 1-2 scoops Instant Protein Coffee
  • 1 teaspoon ground flaxseed
  • 1/2 teaspoon baking powder
  • 2 teaspoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 6-8 slices of bread
  • 2-3 tablespoons butter or oil of choice
  • Cocoa powder, for topping

Cream cheese mixture

  • 6 tablespoons cream cheese or mascarpone
  • 6 tablespoons plain or vanilla yogurt
  • 1 teaspoon maple syrup
  • 1/4 teaspoon vanilla extract


  1. In a shallow bowl, wide enough to hold a piece of bread, whisk together milk, cornstarch, ground flaxseed, baking powder, Javy Coffee Concentrate, maple syrup, vanilla, and salt. Heat a bit of butter in a pan over medium heat and melt. Whisk the batter again right before dipping the bread, as the cornstarch will settle to the bottom of the bowl.
  2. To make the cream cheese mixture, stir together the ingredients until combined. Set aside in the refrigerator.
  3. Dip each side of the bread in the protein batter and let soak for about 10 seconds, then add the bread to the pan and cook for 2-3 minutes on each side, until golden brown. Add more butter or oil to the pan as needed in between pieces of bread.
  4. Layer the French toast with the cream cheese mixture and top with a dusting of cocoa powder. Can also serve with maple syrup or fresh fruit.
