Ingredients

To make the cookie:

  • 1 2 /3 cups flour
  • 1 1/2 Tsp baking soda
  • 1/2 Tsp salt
  • 1 Tsp Javy Coffee Concentrate
  • 2/3 cup unsweetened cocoa powder
  • 3/4 cup water
  • 1 cup sugar
  • 1/2 cup butter
  • 1 egg
  • 1 1/2 Tsp vanilla

To make the frosting:

  • 2 cups powdered sugar
  • 3/4 cup butter
  • 1/2 Tsp Javy Coffee concentrate
  • 1 1/2 Tsp vanilla

Directions

  1. Preheat oven to 350-degree lime cookie sheets with silicone mats or parchment paper.
  2. Beat sugar, butter, Javy Coffee Concentrate, and an egg together in a large bowl with an electric mixer until light and fluffy.
  3. Sift flour, cocoa, baking powder, baking soda, and salt together in a separate bowl; add to the sugar mixture in batches, alternating with water, beating briefly after each addition until smooth. Stir in vanilla. Drop 2 tablespoons of batter or use a cookie scoop for each cookie, placing them 2 inches apart onto the prepared baking sheets.
  4. Bake for 10-12 minutes. Transfer to a wire rack and allow to cool completely.
  5. To make the filling, beat powdered sugar, butter, and Javy Coffee Concentrate in a large bowl with an electric mixer until light and fluffy. Stir in vanilla.
  6. Choose 2 cookies of the same size; spread a thick layer of filling on the flat side of one cookie; top with the remaining cookie. Repeat with remaining cookies and frosting.‍
